Good Bye June, Hello July

The end of June marks half the year and 1/3 of being 27 gone.
I always get a little anxious when I talk about time passing. To me, there is never enough time in a day/year/life. My boyfriend has finally kicked the habit of teasing me at 10am by telling me "the day is nearly half over." The panic that ensues after scares him so much he's stopped hehe. 

This is why I set goals. Goals help me accomplish a days work without the panic. I write lists for everything and feel an amazing sense of accomplishment when I cross something off that list. I'm just weird that way.

That is why I set my 27 goals for 27.
It's what helps motivate me and keeps it visual. I like visual.

So here are the goals I have accomplished since setting them. Some are still a work in progress, but here's how I'm doing!

 27 GOALS FOR 27
  • Run three 5Ks - 2 of 3 down!
  • Get caught up on my taxes *blush*
  • Finish the photo-a-day project - 1/2 of the year down and still going strong
  • Go to beach more often
  • Create a time capsule
  • Hit my target weight and stay there
  • Find a job that offers me health insurance
  • Make improvements on my blog - New "Stay Connected" Buttons
  • Attend 2 blog conferences/events - 1 down, 1 to go!
  • Sew a dress
  • Take a trip to a place I've never been - Hailey, I'm comin' to Canada!
  • Visit my family back east - Tickets Booked!
  • Eat. More. Veggies!
  • Make a quilt
  • Blog more than once a month *double blush*
  • Build something out of wood
  • Make more time for "old" friends
  • Volunteer for a worthy cause
  • Create a photo display for my house - photos choosen, frames gathered
  • Paint something
  • Read 12 good books - 7 down!
  • Call my brother and sister more often
  • Plant a garden
  • Improve my Spanish
  • Bake a loaf of sourdough bread
  • Camp on the beach
  • Be Happier. - I've been working on this the most. I've been so happy lately. I think all the pictures of me smiling are a good indication of that!

Mini Fish Tacos

Has this ever happened to you?

Friend: 
Hey, were having a bbq, you should come over.
Me:  
Thanks, sounds fun. What would you like me to bring?
Friend: 
Oh don't worry about bringing anything, we'll have plenty of food.
Me: 
But... what do you mean don't bring anything?
Friend: 
We'll be grilling, I've made some side dishes, we should be good on food.
Me: 
Okay....
Friend:  
Okay, see ya then. Bye!
Me: 
 Bye?

As a food blogger and as a person who likes to cook I really don't know what to do with myself when someone says "don't bring anything, there's plenty." Not only do I feel ungrateful for not contributing, but get-togethers like BBQs are best way to show off. I try to impress my friends when I bring a shared dish. Lets be honest. We've all done it.

So when this friend said don't worry about it, wanna know what I did...?

I made mini fish taco cups!

I took that "were good on food" as a challenge. What kind of party would it be if I didn't bring mini morsels of San Diego's signature dish? 

NO PARTY AT ALL I SAY!

The first step to really good fish tacos, large or small, is to get a really good cut of fish. We went with one that was already marinated. Next we picked up the tortillas for the shells and our preferred toppings and then we were off!

Once at home, Rob cooked the fish in the wok, super fast and easy (he's so helpful!) and I started on the taco shells. These little guys are so versatile.

To make the shells, start with corn tortillas and a biscuit/cookie cutter. If you dont have either, a cup and knife will also work.
 Heat the tortillas in the microwave. This is an important step because it will be hard to put them in the pan if they are stiff.

 It may take a try or two before you get the hang of how they fit in. Put really as long as they create a general cup shape, you're golden.

Bake at 375 for about 8-10 minutes. Keep an eye on them though, the thinner the tortilla the faster it will cook. But I didn't have to tell you that :0)

Now we start to assemble:
 1. Add cooked fish to the cups 2. Small dollop of white sauce* 3. Cheese and cabbage 4. Slice of avocado!
*White Sauce: Sour cream mixed with a couple squeezes of lime and a shake of chili powder

TA DA!
Whip these bad boys up ASAP.
Everyone will love you and think you're just the most clever person!
