White Chocolate Mousse Cake

Christmas Challenge - Day 5
This seems like a nice little holiday treat. I want one.

White Chocolate Mousse Cake
1/2 cup crushed cookies (we suggest Marks & Spencer Pistachio and Almonds Cookies)
2 tablespoons melted butter
1/2 cup melted white chocolate chips
1/4 cup all-purpose cream
1/2 cup softened cream cheese
2 cups whipped cream
1/3 cup sugar
white chocolate chips

1.  To make pie crust, mix the crushed cookies with melted butter. Press onto the bottom of muffin cups. Chill for 15 minutes.

2.  To make the filling for this pie, microwave white chocolate chips and all-purpose cream for 30 seconds.

3.  Stir, then add softened cream cheese, whipped cream, and sugar. Mix well. Pour mixture into the prepared pie crust. Chill. Sprinkle with white chocolate chips before serving.

4.  Chow down!
