My Apologies

I haven't been around for awhile. Personal stuff. If you've ever had a falling out with a best friend then you know how I feel. You life has changed in a big way and also everything is the same. You still share the same friends, live in the same town perhaps, or maybe your boyfriends are best friends :0( And even if things have gone past reconciliation, it still sucks big time.

But that doesn't mean I should stay away so long. I mean, after all, isn't that what a blog is all about, expressing your feelings, ideas, thoughts, and concerns? If it isn't or you aren't interested, I apologize for this emo post.

To make up for my absences, and my whining, here are some "I'm sorry cupcakes" to show you how I care. Cause I really do.

"I'm Sorry" White Chocolate Cupcakes w/ Raspberry Cream Cheese Frosting
I don't have a picture of these bad boys because as soon as I made them, they were eaten! Crazy fast! So this picture is from Big Oven. Recipe is a more simplified version.

Cake - 
1 box White Cake Mix (I used Pillsbury so the following three ingredients may vary depending on brand)
2 eggs
1 1/4 cup water
1/3 cup oil
1 1/2 cups white chocolate chips
1 tsp vanilla
mini liners

Frosting - 
1 can cream cheese frosting
2 8oz packages of cream cheese
1/2 cup softened butter
1 CUP SUGAR, not 2, trust me
1 tsp vanilla exract
And 1 cup fresh or frozen raspberries

(The reason why I gave both is because the can of cream cheese frosting is very sweet, with the raspberries added it can be a bit overwhelming. However, it makes for a thicker frosting. The one from scratch is going to be less sweet but much runnier. Experiment around to see what works for you. Remember adding more powdered sugar will help make it thicker.)

1. Preheat oven to 375f. Add all the cake ingredients to your bowl and mix.

2. Line your tray with mini paper liners and fill cup 2/3 of the way full.

3. Mix the ingredients for the frosting together in a separate bowl. Put frosting in the fridge.

4. Bake cupcakes at for 15-20 and let them cool completely.

5. When cool, pipe or spread frosting on the cupcakes.

6. TaDa!

*If anyone has any advice or personal experiences losing friends, let me hear it. I'm still trying to figure things out...

    Sorry about your fallout with your best friend! The exact same thing happened to me this fall, and it is hard and sad! Especially when you share everything with that person and now they aren't there.
    I'm a new follower.....and I love the Amy Blog idea! So nice to find another Amy Claire....and one that is a sweetheart too! HUGS!

  5. I'm sorry about your friend. Maybe time is all you need, but you should really express to him/her what you're feeling. Good or bad. My best friend was in a bad car accident and has been in a coma for over a month. We were on good terms, but there is always that what if I did this or maybe I should have told her that. Just don't have any regrets.

  6. Thank you so much. It's nice to hear others have gone through the same thing. Amy, sorry that it happened so recently. It happened in the fall for me too but I just saw her take me off of FB so shes moving the bar up in this no speaking ordeal. It sounds silly but that was her last straw.

    Aimee, that is just awful. I am so sorry to hear about your friend. What you said makes sense, have no regrets. I'm gonna try to work on that. I am praying and thinking good thoughts for your friends speedy recovery.

  8. So sorry to hear about what you're going through. I hope it all works out for the best. Here is a chocolate recipe to cheer you up (using a muffin pan of course):

    Caramel Pecan Chocolate Ganache Cups
    9 Nilla Wafers
    8 oz. semisweet chocolate, chopped into small pieces (I use Ghiradelli)
    1 cup whipping cream*
    1/4 tsp espresso powder or 1 Tbl strong coffee**
    2 Tbl caramel sauce***
    Extra caramel sauce
    1/2 cup chopped pecans, toasted
    whipped cream

    1. Line 9 muffin cups with liners and place a Nilla wafer at the bottom of each cup.
    2. In a medium sized bowl, combine the chocolate, cream and espresso powder. Microwave on high for 1 minute. Stir briefly, then microwave an additional 45 seconds.
    3. Whisk until smooth and dark brown in color. This will take about 2 minutes to get everything completely mixed. Add the caramel sauce and stir well.
    4. Using a 1/4 cup measure, fill each muffin cup 2/3 full. Refrigerate at least 4 hours.
    5. Just before serving, add 1-2 tsp caramel sauce to the top of each cup. Top with whipped cream and toasted pecans. Serve with a spoon.

    *For a firmer texture, use whipping cream. For a light and soft texture similar to pudding, use half and half.
    **This ingredient is optional, but highly encouraged. The coffee accentuates the chocolate and makes it taste more like chocolate.
    ***seedless raspberry preserves or orange marmalade may also be used.

  9. I've been there too ~~ and what SHANNON W. said above ~~ you will look back and realize the world did you a favor. Silly me went back to the friend (a couple of years later)...and man, the girl was just plain nuts...I should have let sleeping dogs lie. But I missed the friendship so much, I wanted to give it another try. Now, I'm just happy I learned the second time around.
