Day 30 & 31 - HALLOWEEN

And the 31 days of posting challenge is over. 

I faltered a bit. Missed a day here and there. But I always tried to make up for it. 

Today is my mom's big birthday extravaganza so I need to get started on decorations.

Day 27 - Stay POSITIVE!

Today's post is about being POSITIVE! And to help me out, I have channeled the beautiful, talented, and EXTREMELY WISE spirit of Marilyn Monroe.

Marilyn Monroe may play a ditsy blonde in most of her films but off screen she is a pretty smart lady.

And I adore her.

Day 26 - APRON!


My very first sewing project I did all by my pretty self!

I am a rock star. If there was any doubt before, now you have proof!

Wanna see it??

FABULOUS! The pocket was an afterthought but I'm so glad I added it in. 

It ties in a pretty bow in the back!

I didn't have anything fancy either. I have no nice pincushion or big sewing box with lots of bobbins and thread and tools. Just me, the machine, a box of pins, tape measure, and one roll of thread. AMAZING!

Now you may look at the first photo and say "Wait a sec. Theres nothing holding it up! No neck strap or tie. UPDATE: Thanks Regena. It's a pinafore!

It's original purpose is for my baby doll costume. It'll get temporarily hand sewn to the dress. Then when Halloween is over, I'll add some straps and VIOLA! New cooking apron. FIRST cooking apron!

Day 25 - Thai Pumpkin Wonton Cups

Because I'm craving good Thai food right now.

And because I just bought these handy little wonton wrappers...

And because its almost almost Halloween (for real this time)...

I'm serving up a recipe combining all those things!

Thai Pumpkin Wonton Cups
Recipe from Peas Love Carrots

For the filling
1 can pumpkin puree
1 cup coconut milk
1 tablespoon fresh grated ginger
1 teaspoon salt
1/4 teaspoon sugar

For the salsa topping
1/2 medium red onion, sliced thinly
1 bunch cilantro leaves, roughly chopped
5 red chilies
1 lime, juiced and zested
Salt and pepper to taste

For the cups
1 package round wonton or dumpling wrappers
Sesame oil for brushing

1. Preheat your oven to 350 degrees
2. Combine your salsa ingredients and set aside

3. Brush one side of each wonton wrapper, and then place into a mini cupcake well, oiled side down

4. Combine all of your filling ingredients and spoon into each wonton (enough to reach the brim of the pan)

5. Bake for approx 15 mins or until wontons are golden

6. Remove from oven and spoon a little salsa into each cup

Day 24 - Eggs Benedict Cups



Man, I love eggs benedict.

I've eaten eggs benedict all over this fair country and it never gets old.

However...the best eggs benedict I have ever had is at GIO Bistro and Wine Bar in Uptown La Mesa.


Heres how the trip to Gio's this morning was planned saturday afternoon.

Boyfriend: I talked to Eli and we're gonna have dinner tonight at Stone. Matt is coming down tonight and is staying over.

Me: Okay, as long as you know we have plans tomorrow morning then that all sounds great.

Boyfriend: Yup.

Me: That was your opporuntiy to ask me what those plans are. I haven't told you yet.

Boyfriend: I already know. We're going to Gio's.

Me: HOW'D YOU DO THAT??? You read my mind! We haven't been there in FOREVER!

Boyfriend: Hahahaha because I know these things. Tomorow is Sunday and we havent been there in forever.

They only serve this wonderful breakfast dish on saturday and sundays between 9 and 2 so you gatta plan your life accordingly. We do.

Did I mention they have fabulous $1 mimosas? HOLLER!

Okay okay now on to the recipe. This one is PERFECT for big brunches. First I'll do the muffin pan recipe then I'll give you the hollandaise sauce recipe.

Eggs Benedict Cups
Inspired by Gio's,  Zoe Cuisine, and Nibbles of Tidbits

3 english muffins, split in half
6 slices of thin deli ham
6 eggs
Hollandaise Sauce (see recipe below)

1. Preheat oven at 375f. In a texas-sized 6 cup muffin pan (or using just 6 cups of a 12 cup pan) press half an english muffin, nooks and cranny side up, into the bottom of each cup.
2. Place a pieces of deli ham on top of the english muffin half in a bowl shape, like this:

3. Crack one egg inside each cup. You may have to some finagling to do with the ham to make sure it stays in place on top of the english muffin.
4. Bake at 375f for about 12 minutes. Check it 10 to see if the whites are white. The yolk should be runny.
5. Read hollandaise sauce recipe.

Hollandaise Sauce
Recipe from Gourmet

2 stick (1 cup) unsalted butter
3 large egg yolks
1 tbs fresh lemon juice
1 tbs water
1/4 tsp salt
1/8 white pepper

1. Melt in a 1 quart heavy saucepan over moderate heat. Remove pan from heat and let stand for 3 minutes. Skim foam from top of butter. 

2. Whisk together yolks, lemon juice, and water in another 1 quart heavy saucepan until frothy. Set pan over low heat and whisk constantly and vigorously until yolks are pale yellow and slightly thickened (you should be able to draw whisk through yolks and see bottom of pan before yolks flow back together), 3 to 4 minutes.

3. Remove pan from heat and gradually whisk in melted butter: drop by drop for first third of butter, then 1 teaspoon at a time for second third and 1 tablespoon at a time for final third, leaving milky solids in bottom of pan. Whisk in salt and white pepper.

Enjoy your yummy eggs benedict cups with fresh hollandaise sauce!!

Day 23 - Pineapple Upside Down Cupcakes

Last night my boyfriend and I had a couple of great friends over for dinner, including my #1 fan "Anonymous" also known as Betty! hehe

It was a great success. Rob chopped and cleaned. I cooked and baked.

The menu was as follows:

Assorted Artisan Cheeses and Crackers

Main Courses
(Recipe from the one and only Melissa D'Arabian)

(And today's recipe)

Note: These ingredients and directions are gonna be short and to the point. Not a whole lot of thought needs to go into these.

Cupcake batter, prepared according to box directions
chopped pineapple pieces, canned or fresh
3/4 a stick of butter
3/4 cup brown sugar

1. Melt butter and sugar in microwave
2. With a spoon, evenly portion out the brown sugar mixture into the bottom of a greased 12 cup muffin pan
3. Add pieces of pineapple (about 3 or 4) to the bottom on top of the butter sugar mixture
4. Pour in cake batter. First batch I filled to the top, the second I did 2/3 of the way. The fuller one turned out better for me.
5. Bake at 400f for 15 minutes. Check on them as ovens vary.
6. Serve upside-down.. of course. AND ENJOY!

Day 20 - Purple Spirit Day

I've been having some issues lately. Over the past couple of days I have been feeling uninspired. I've been argumentative and moody and overall feeling low. I have gone through some big changes and am having trouble finding myself in all the hustle and bustle. Change is hard. But I am lucky enough to have people in my life who support me (as long as I let them). Not everyone is that lucky. 

Today, Oct. 20th, 2010, is a day to show your support and your love to those who feel alone and unsure. Today is Spirit Day. 

Canadian teen, Brittany McMillan, sent out a message on Tumblr to anyone who would listen. She said:
On October 20th, 2010, we will wear purple in honor of the seven gay boys who committed suicide in recent weeks/months, many of them due to homophobic abuse in their homes or at their schools. Purple represents Spirit on the LGBTQ flag and that’s exactly what we’d like all of you to have with you: spirit. Please know that times will get better and that you will meet people who will love you and respect you for who you are, no matter your sexuality.

Now over a million people have pledged to wear purple to support this cause. 

Purple is spirit. But it also means POWER. By wearing purple today you have the power to make a difference. Show your support to those who may think no one out there understands. Let's stop this cowardly bullying and take a stand. SPEAK UP! Nobody should feel that there only option is suicide. Let's get together and show them there are people out there who care. I care. That's why I wear purple today.
